They call this salmon ceviche, but it’s really more of a poke because it is super quick. A typical ceviche would require some marinating time, but here you just toss the ingriedents and eat!
This recipe is adapted from the epic cookbook Salt & Silver, which chronicles the adventures of two German Chefs as they travel and surf through Central and South America. I thought I’d share this recipe with you because (1) it’s delicious, (2) the coconut milk and Granny Smith apple are unique additions to ceviche and (3) the ingredients are easily attained at the supermarket no matter where you live!
1/2 Red Onion
1/2 Granny Smith (Green Apple)
500 G Sashimi Grade Salmon
1 Bunch Cilantro (Corriander) Chopped
1/2 Cup Unsweetened Full Fat Coconut Milk
Juice of 4 Limes
Salt and Pepper
Optional: rice and sushi accompaniments; tortilla chips; or cucumber rounds for serving.
Dice onion and apple. Finely chop cilantro. Cut salmon into bite sized pieces. Place all ingredients in bowl and top with lime and coconut milk. Mix thoroughly. Serve with rice or chips or cucumber.
